Anne Maltais is a researcher/project manager at Food Technology and Engineering Institute (ITEGA) at Collège de Maisonneuve. She obtained a B.Sc. (2002) and a Ph.D. (2009) in food science and technology from Université Laval with a specialization in nutraceuticals and functional foods. She joined ITEGA team as a scientist in 2010 after a post-doctoral fellowship on food allergens at Agriculture and Agri-food Canada. She mainly works on projects with the industry aiming specific needs for food preservation and engineering. She is also involved in the development of intelligent and active packaging devices as well as eco-friendly packaging solutions adapted to food industry. She is also an active member of the International Association of Packaging Research Institutes (IAPRI).

Actual research interests

  • Shelf life testing/optimization
  • Modeling respiration rate of vegetable for equilibrium modified atmosphere packaging
  • Active and intelligent packaging
  • Characterization of packaging material (gas and water vapor transmission rate, mechanical properties, porosity, identification)
  • Technical assistance in food packaging and engineering
  • Overall and specific migration testing/food security
  • Food preservation and packaging techniques (modified atmosphere packaging, high pressure processing, coating, antimicrobials)
